RICE PAPER ROLLS WITH PEANUT BUTTER SAUCE!

Serves 4 people as a starter/snack and 2 as a main meal🥳

• 8 spring roll wrappers
• Lettuce
• 1 cucumber
• 2 medium size carrots
• Fresh basil
• Fresh coriander
• 2 spring onion
• 1 cup wakame seaweed
• 1 avocado
• 1 pepper

Steps:

  1. Cut everything to matchsticks

  2. In a wide bowl add warm water. Deep the dry rice paper and wait until it becomes soft.

  3. apply the soft paper on a plate and start adding your veggies in the centre

  4. Fold the two sides in and cover the vegetables.

  5. With the top side of the rice paper roll until it completely covers all the vegetables and creates the shape you can see in the photo!

For the peanut butter sauce:
• 3 tbsp peanut butter
• 2 tbsp water
• 1 tbsp soy sauce
